Description

The cardoon is a stout herbaceous perennial plant that is native to southern Europe and North Africa, where it is used as a vegetable. As a matter of fact, only the innermost, white stalks of this plant are considered edible. These leaf stalks do look a lot like giant celery stalks. Besides, they can be served steamed or braised, not to mention that they have an artichoke-like flavor with a hint of bitterness. When it comes to their nutritional benefits, cardoons are great source of sodium, magnesium, iron and potassium. Containing iron, cardoons actually promote mental function, normal motor skills, and the implementation of new information. Besides, their high content of calcium reduces the risk of colon and rectal cancer.
