Brussels sprouts are thought to be native to Belgium, specifically a region near its capital, Brussels, after which they are named. Basically they are compact rounded leaves tightly bound into individual spherical-shaped heads, which in turn offer the flavors of the earth and the bitter sweetness of cabbage. However, the younger the Brussels sprouts carry a sweeter more palatable flavor. As a matter of fact, this vegetable is low in calories but high in many nutrients, especially fiber, vitamin K and vitamin C. In addition, it contains kaempferol, which is an antioxidant that may reduce cancer growth, decrease inflammation and promote heart health.
