Chayote squash was actually one of the earliest cultivated plants within the New World, though there is no definitive archaeological evidence to prove just how long it has been in existence. This vegetable is small to medium in size and has a pear-like shape along with a creamy white flesh that is crisp to starchy. In addition, chayote squash is crunchy and very mild with a slightly sweet taste and light notes of cucumber. Nutrition-wise, this vegetable contains vitamin C, vitamin B-6, folate, dietary fiber, and potassium. Besides, it provides multiple antioxidants — including vitamin C and myricetin — both of which fight disease and promote health.
