The chicory plant is actually one of the earliest cited in recorded literature; even Horace mentions it in reference to his own diet. Chicory is a somewhat woody plant that is typically cultivated for salad leaves, or roots, which are baked, ground, and used as a coffee substitute and food additive. Its outer leaves are green and can be bitter, with lighter green inner leaves that can be mild to the taste. With its satisfying, toothsome crunch and big flavor, chicory is not just a refreshing ingredient in salad recipes, but it is also quite beneficial in its own right. As a matter of fact, chicory leaves hold excellent levels of Vitamin-A and β-carotene. Vitamin A, for instance, is required for maintaining healthy mucosa and skin, not to mention that it is essential for good eyesight.
