Alfalfa dates back nearly 6,000 years to present day Iran. Besides, alfalfa greens have a mild flavor, with a slight sweetness and no bitterness. In addition, they are very high in protein and dietary fiber. In fact, alfalfa greens have the highest chlorophyll content of any plant and contain large amounts of enzymes, making them easily digestible. These gorgeous leaves are also a good source of vitamins C, E, and K, as well as iron, calcium, magnesium, and phosphorus, not to mention that they act as a diuretic in large doses. As far as cooking is concerned, alfalfa greens can be used raw, cooked or dried. Besides, they can be juiced or blended into a fruit or green smoothies.
