The Fennel roots are white and spindly, resembling baby parsnips. The fact that fennel is a good source of Vitamin C is noteworthy, because this vitamin has the strength to zap free radicals looking for a place to cause damage in the body, usually in the form of inflammation, which could lead to joint degeneration and arthritis. And as far as fennel roots are concerned, they can be used in a myriad of ways. For instance, you can dice and roast them with other root vegetables. You can also boil and puree them for use as an addition to soups as a thickener, or you can simply use them as a garnish on your special plates.
