Endive is believed to have originated in Egypt or Indonesia in the 16th century. Belonging to the Chicory family, this curious, little plant has a crisp texture and a sweet, nutty flavor with a pleasantly mild bitterness, making it great served raw or cooked. Nutritionally, endive is a very low-calorie food that contains a good amount of dietary fiber, which in turn aids in digestion by helping prevent constipation and reduce the risk of heart disease. As a matter of fact, there are several studies out there that have indicated that individuals with type 1 diabetes who consume high-fiber diets have lower blood glucose levels.
