As you might have guessed, fennel is preceded by the word "Baby" when harvested young. In fact, Baby fennel has a more delicate taste than when it is mature, and the anise-like notes that the mature version is known for is less pronounced. However, it is used in the same way as the older variant. These crunchy bulbs have a sweet, herbaceous licorice-like taste. Besides, they contain vitamins K, C and A, potassium, and dietary fiber. As a matter of fact, Vitamin K in this plant is important for health, as it modifies bone matrix proteins, improves calcium absorption, and may reduce the excretion of calcium in urine. And as far as food is concerned, Baby fennel can be used raw in salads, or as a garnish for pasta or soup dishes. It sure tastes yummy in these dishes.
