Hearts of palm have been cultivated in Central America since the time of the Mayas. They are encased in a tough cylindrical, ivory husk that hides a velvety, tender flesh. Tasting somewhat like an artichoke, hearts of palm have the appearance of white asparagus. When fresh, these white sticks contain no cholesterol.
