Originated in Island Southeast Asia, ginger root is a knobby, multiple “fingered” rhizome with light to dark tan, thick skin and a firm, yet fibrous flesh. These aromatic rhizomes have in fact been used as a spice and a folk medicine for over 2000 years. Ginger not only adds delicious flavor to food — it’s also full of nutrients. For one, it has been used to help digestion, reduce nausea and help fight the flu and common cold, to name a few. Besides, it contains protease, which gives the rhizome its anti-inflammatory properties.
