Lima beans originated in Peru and have been grown there since 6000 B.C. This species is a legume that is widely grown for its edible seeds and beans. Plus, it is sometimes called "butter beans" because of its starchy, yet buttery texture and its delicate flavor, both of which complement a wide variety of dishes. These kidney-shaped seeds are generally cream or green in color, although certain varieties feature colors such as white, red, purple, brown or black. And although they are not exactly the most loved variety of bean available, Lima beans are indeed nutritious powerhouses. Like many other legumes, they are a good source of dietary fiber, and a virtually fat-free source of high-quality protein. They also contain both soluble fiber, which helps regulate blood sugar levels and lowers cholesterol, and insoluble fiber, which aids in the prevention of constipation, digestive disorders, irritable bowel syndrome and diverticulitis.
