Believed to have originated some 20–40 million years ago in Italy and the eastern Mediterranean Basin, the olive is considered one of the core ingredients in Mediterranean cuisine. Besides, olive fruits come in a wide range of colors, from straw-green to purples and black …even pink! In addition, about 90% of all harvested olives are turned into oil, while about 10% are used as table olives. As a matter of fact, a single serving of cured green olives is a rich source of vitamin E and other powerful antioxidants. Studies even show that olives are good for the heart and may protect against osteoporosis and cancer.
