Description

Native to North America, pumpkins are actually one of the oldest domesticated plants, having been used as early as 7,500 to 5,000 BC. Besides, this vegetable is high in vitamins and minerals while being low in calories. It’s also a great source of beta-carotene, a carotenoid that your body converts into vitamin A. In addition, pumpkins contain the antioxidants alpha-carotene, beta-carotene, beta-cryptoxanthin and many others, which may protect your cells against damage by free radicals. Pumpkins are indeed very versatile in their uses for cooking, considering most of their parts are edible, including the fleshy shell, the seeds, the leaves, and even the flowers.
