The history of white peppercorns is linked quite intimately with the history of black peppercorns since they come from the same plant and are technically the same thing. White peppercorns are just black peppercorns with the pericarp (the skin) peeled away to reveal the white peppercorn underneath! Even though it’s not nearly as common as the well-known black pepper, white pepper is both peppery and floral, not to mention that it is also a great compliment for light colored dishes. Nutrition-wise, white pepper possesses a subtle amount of manganese, which is an essential cofactor in some enzymes important in antioxidant defenses. This pepper also fights tooth decay and provides quick relief from a toothache.
