Native to Mexico and South America, Jicama is an oval-shaped root vegetable with a size that can range from 500 grams to 2.25 kg, although some can even reach up to 23 kg! Plus, it has a rough brown skin and a juicy, crisp, white flesh, not to mention that it is sweet, with a texture and taste similar to a water chestnut. Nutrition-wise, Jicama contains many important vitamins and minerals, as well as a significant amount of fiber. It also contains several antioxidants, which are beneficial plant compounds that help prevent cell damage. In fact, studies have linked antioxidants in fruits and vegetables to a lower risk of heart disease, diabetes, obesity and Alzheimer’s. In addition, Jicama is often added to salads or side dishes for additional texture and flavor.
