The Kaffir lime tree is native to landlocked Laos, Myanmar, Thailand and other parts of south Asia. Besides, this lime is small with a rind covered in small bumps and ridges that are entirely unique to this species of lime. These limes are also relatively dry, and what juice they do offer is acidic, bitter, and strongly sour. In addition, Kaffir limes contain high amounts of citronellol and limonene, which have beneficial anti-inflammatory and anti-bacterial properties. They are best known and used for their intensely fragrant rind and zest rather than for their juice.
