Armenian cucumbers are slender, elongated, curved, and often irregularly curled, averaging 25-38 centimeters long. Their thin skin ranges from a dark green to light green, and can be smooth or textured with longitudinal furrows and green stripes. Besides, their flesh is crisp, sweet, succulent, and mild with some edible seeds, similar to a common cucumber. Nutrition-wise, these cucumbers are high in antioxidants with vitamin-C & vitamin-A. These elements act as a protective shield against free radicals that are the main reason for various diseases and aging process. When it comes cooking, Armenian cucumbers can be used in both raw and cooked applications. In addition, their delicate flavor allows them to become a perfect textural component in sandwiches and sushi.
