Cowpea plants, which are high in protein and extremely drought tolerant, have been one of the main food crops in Africa for thousands of years. Africans also cook the plant's leaves, which are 25 percent protein based on dry weight. As a matter of fact, nutritional experts have discovered that cowpeas' leaves encompass more nutritional value then the peas themselves.
