Bicolor corn was first developed in the mid-20th century by agricultural scientists at the University of Massachusetts, to incorporate more sweetness into commercially available varieties. This variety is a type of sweet corn, and offers both white and yellow kernels all on the same cob, or ear, of corn. Besides, Bicolor corn contains a high percentage of sugar and water, and when at its peak of maturity, will be tender, sweet and succulent. As far as its nutritional profile is concerned, this corn contains high amounts of folate, B-complex vitamins, and vitamin C, and is also a good source of dietary fiber. In addition, it contains vitamin A, as well as potassium, copper, magnesium, manganese, and iron. As a good source of lutein and zeaxanthin, corn may in fact help maintain your eye health.
