A combination of time and effort is what it took to make Glass Gem the vibrantly colored corn it is today. Grown more for its ornamental value, this variety is used mostly for grinding into cornmeal. Well, the kernels can be popped as well, though the colors do not survive the process (Unfortunately!). When picked early, while the cob is still soft and the stalk is still green, this corn can be eaten raw, though it isn’t particularly recommended, considering it is quite starchy and specifically ideal for milling into flour.
