Rhode Island Greenings were actually a very popular apple variety in terms of consumption and commercial importance for the first 200 years of American history. These apples are round to oblong and are of variable size, but tend to be large. Plus, their skin is bright green, with a creamy, firm flesh. As for their flavor, it is very tart when picked, but mellows and sweetens as these apples age. Because these apples retain their shape when heated, they make an excellent cooking fruit. Rhode Island Greenings may also be eaten raw, but they taste way better after several months of storage.
