This large variety of artichoke was actually developed in collaboration with growers in France and Italy. Fiore Violas are large globe-shaped with tightly-packed, meaty leaves that offer a sweeter flavor than conventional artichokes. Besides, they are high in antioxidants, particularly due to the presence of anthocyanin, a phytonutrient responsible for the deep purple color of their outer leaves. In addition, Fiore Viola artichokes are rich in folate, and are also a good source of fiber and vitamin C. In fact, the extracts of artichokes make for a promising dietary tool in cancer prevention as well as in therapy.
