Anzio artichokes are primarily cultivated in Italy and France for farmers markets. When cooked, Anzios are rich with flavors of toasted nuts, dry grass and caramel. And when slow-cooked, such as roasting, braising and poaching, these artichokes become tender, more flavorful and they also absorb the savory flavors around them most optimally. For nutritional purposes, artichokes are primarily consumed due to their associated benefits of bolstering the immune system strength, lowering cholesterol, and protecting against diseases such as diabetes, atherosclerosis, heart attack, and stroke.
