The Dixie Butter bean has been a staple in the southern United States since the 1700’s and still today is celebrated during its brief season in the summer months. As a matter of fact, this bean produces a pod similar to the conventional lima bean, and contains on average three to four beans which are, when mature, characteristically speckled with pink streaks or dots, similar in appearance to that of cranberry beans. When cooked, these beans impart a succulent texture and almost buttery flavor. In addition, Dixie beans are low in fat and offer protein, fiber and potassium, which in turn supports blood pressure, cardiovascular health, bone strength, and muscle strength.
