Shanghai bok choy cabbages are young, tender, and have spoon-shaped leaf blades that are kelly-green in color, which are supported by translucent and succulent white to pale green stalks that join at a common base. The thin stalks are also tender, crisp and succulent. These cabbages are sweet and mild in flavor, with notes of celery and cabbage, and sweet pea undertones. Besides, they contain vitamins A, C, B6, K, phosphorus, potassium, calcium, folate and magnesium. This crunchy vegetable is also full of gut-friendly insoluble fiber, a type of carbohydrate that can’t be broken down in the intestines. Insoluble fiber actually helps keep the digestive system healthy by adding bulk to stools and promoting regular bowel movements
