The reddish orange color of these tiny lentils turns golden once they’re cooked. In fact, these lentils cook quickly and generally lose their shape in cooking. As such, they are good for soups, stews, and pureed side dishes. Nutrition-wise, lentils are a great source of folate and magnesium, which are big contributors to heart health.
