Developed at the University of Saskatchewan, the Laird variety is a large lentil that is celebrated for its robust, earthy flavor. Since they hold their shape well, these lentils can be used in side dishes seasoned with herbs, served along with pasta, rice, or a favorite whole grain, and in soups and stews. In fact, not only do lentils help lower cholesterol, but they are also of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal.
