Grown primarily in Provence, the Bouteillan is a cultivar of olives mostly used for the production of oil. These olives are of medium weight, and ovoid and slightly asymmetrical in shape, not to mention that their color becomes burgundy when fully mature. If these olive fruits are harvested early, they can have a taste that is both strong and herbal. With a later harvest, however, the taste becomes fruitier, reminiscent of ripe pears. Nutrition-wise, olives are very rich in antioxidants that may contribute to a variety of benefits, such as lowering cholesterol and blood pressure. They may also reduce your risk of cancer and bone loss.
