Native to and still found growing wild in China, Abalone mushrooms are named for the aquatic shellfish, abalone, whose shape they resemble. Besides, their flesh is crisp, white, dense and spongy with an earthy, buttery flavor with notes of pepper and a velvety texture when cooked. When it comes to their nutritional benefits, these mushrooms have a concentrated protein and carbohydrate content as well as a large proportion of dietary fiber. They also have qualities including antioxidant properties, anti-inflammatory agents and tumor inhibiting qualities. As far as cooking is concerned, Abalone's subtle flavor is actually best when not overcooked, however that doesn’t mean that you should consider these mushrooms edible when raw, because they’re not!
