The Ascolano olive is an Italian cultivar that is elliptically shaped, long, rounded at the apex, and has a truncated base. Even though this variety does not yield as much oil as other olive fruits, it is still delicious when drizzled over simple pasta with freshly grated Parmigiano-Reggiano and cracked black pepper.
