Red celery has actually been around since the 18th century. It is one of the easiest celeries to cultivate, not to mention that it is well known among connoisseurs for its rich walnut flavor. Even though its stems are not thick like commercial celeries of the supermarket, their flavor is intense, not to mention that this particular variety holds its color when cooked. In addition, celery in general is loaded with vitamin B6, calcium, vitamin C, potassium, vitamin A, folate, vitamin K, fiber, and protein. It is also loaded with polysaccharides and antioxidants, which in turn have the ability to cure free-radical damage that contributes to inflammation, which again causes chronic diseases such as heart disease, cancer or arthritis.
