This 1939 All-America Selections winner is still the most popular variety on the market. These okras are usually picked when they are 5 to 8 cm long. You wouldn't want to let Clemson Spineless Okra exceed 7.5 cm in length, because mature okra is tough and is not recommended for use in certain recipes. In fact, Clemson pods, while they’re still fresh and tender, are excellent for use in soups, stews and relishes. Besides, studies show that okra is replete with antioxidants, an attribute that makes it an excellent anti-fatigue food. In addition, the most important aspect of this veggie is the mucilage it contains – the slime, which consists of exopolysaccharides and glycoproteins. Indeed, this is one of the major contributors to okra’s beneficial effects.
