Okra is especially popular in Egypt, Morocco, India, Africa, the Caribbean, South America, and the Middle East and in the southern United States as well. This beautiful okra is torpedo shaped and averages 5 to 12 cm in length. Offering a unique flavor and texture, the fresh taste of Red okra is somewhere between eggplant and asparagus. When cooked, however, the red color disappears and the pods turn green, yet this okra leaves behind a colorful touch. Nutrition-wise, Okra provides a good source of vitamin C, vitamin A, folate and other B vitamins plus magnesium, potassium and calcium. It is also fat-free, cholesterol-free and low in calories. As a matter of fact, eating okra may help pregnant women meet their daily folate needs. Folate, for those who don't know it, is important for preventing neural tube defects.
