Cowhorn Okra was first introduced to the United States around the time of the Civil War. Like other varieties, Cowhorn is an excellent source of vitamins C and K1. As for Vitamin C, it is a water-soluble nutrient that contributes to your overall immune function, while vitamin K1 is a fat-soluble vitamin that’s known for its role in blood clotting. Cowhorn is actually a rare variety that can grow anywhere from 25 to 35 cm, and its pods may curve or twist as they get longer. You shouldn't be very excited about these okra pods when they exceed 20 cm long, though, because if they do, you wouldn't be happy with their bitter taste and fibrous texture. So, you have to make sure that you pick them when they're still young and fresh. Plus, the flavor of this okra is reminiscent of eggplant or asparagus, with a different texture. So, it must taste fantastic in soups and stews!
