Canada Red Rhubarb is a perennial that is commonly grown for its edible qualities, although it does have ornamental merits as well. The large cherry red stalks have a sweet taste and a crisp texture. In addition, they are most often used for cooking, baking, preserves, canning and sauces. When consumed regularly, Vitamins A and C in rhubarb begin warding off cancerous cells, not to mention that this plant could also become a natural source to obtain beta-carotene and other compounds that combat the factors that cause oral and lung cancer.
