Reed’s Early Superb is an early flushing variety that produces bright red, relatively thin sticks with good flavor and texture. Generally speaking, rhubarb contains more calcium than a comparable cup of milk, but in a form the body cannot easily absorb. The stalks do, however, provide healthy amounts of fiber, vitamins K and C, potassium and manganese, among other vitamins and minerals. As a high-fiber food, adding this vegetable to your diet may be an effective way to help ease digestion.
