Description

Originated in what is now Niger in Africa, Purple Hull peas resemble Black-eyed peas, though, except for the color of their "eyes". Besides, each shell contains up to ten small, rounded peas with a green, glossy sheen and a burgundy eye at the bean's belly. In addition, Purple Hull peas have a nutty, sweet taste with a creamy texture. They are also a good source of protein, fiber, and folate which benefit a healthy heart. Because these peas are singled out for their soluble fiber, you may not realize they also provide substantial insoluble fiber, which helps combat constipation, colon cancer, and other conditions that afflict your digestive tract.
