These beans can be utilized in their raw form as a means to showcase their vibrant hue, considering they lose their catchy color when cooked. Nutrition-wise, Baby Yellow beans contain a large amount of water and offer some of vitamins B, C, A and E as well as manganese, iron and potassium. They also offer significantly less protein than shell type beans as a result of their immature seeds. However, for the highest nutritional content, these beans should be consumed raw or just lightly cooked.
