Limo peppers are highly variable and can mature to a variety of colors including purple, red, orange and the more commonly known yellow. Aji Limos are small, 2 to 8 cm conical peppers, and have a very floral and fruity aroma, similar to the related habanero peppers. Plus, it is easy to detect hints of citrus beneath their spiciness. These peppers contain high amounts of vitamin C and A, as well as essential minerals like potassium, magnesium and iron. In addition, the capsaicin responsible for their spiciness helps speed metabolism and offers beneficial antioxidant and anti-inflammatory properties. These spicy peppers are traditionally used in salsas, not to mention that they pair well with fish and other Peruvian dishes, like spicy chicken, or stews made with meat and vegetables. Plus, the yellow, orange, red or purple peppers add color to any dish. It is worth noting that Aji Limo peppers will keep in the refrigerator for up to a week if loosely wrapped in plastic.
