Description

Eggplants in general are known for having a unique range of health benefits, including their ability to help build strong bones, reduce the symptoms of anemia, and increase cognition. In fact, they are also good for weight loss, managing diabetes, improving cardiovascular health. As for African eggplants, they are grown predominantly in Central and West Africa, where they have always been considered a staple ingredient in African cuisine. These eggplants can be found in an assortment of shapes/sizes from a small, round egg shape to a globular, pumpkin-like shape with deep furrows. Besides, their inner flesh is crunchy and pale yellow or ivory, although it has a distinctly bitter taste that becomes more bitter as this fruit ripens.
