Mini bell peppers have become more popular in the United States since 2006. Since then, more varieties have been developed. Unfortunately, the small Cupid bell peppers are still limited in their availability to small farmers markets and home gardens. This variety is a nutrient-dense vegetable, with vitamins C, A, E, B6 and six different carotenoids – the phytonutrients responsible for its deep red color. These different carotenoids also have antioxidant and anti-inflammatory benefits, and have been shown to have cancer-fighting properties. Besides, Cupid peppers are smaller versions of the traditional-sized red bell peppers, as they rarely reach lengths longer than 5 cm, not to mention that they have the same slightly rounded cubical shape of their larger cousins, only on a smaller scale. In addition, Cupid peppers ripen from green to glossy red, and are most often harvested when red and fully mature. Plus, they are sweet and have a juicy, crunchy texture. When it comes to their culinary uses, these beautifully red babies are well-suited for stuffing for appetizers or hors d’oeuvres.
