As a matter of fact, green bell peppers have over half a milligram of lutein and zeaxanthin, which makes them one of the best natural sources of these antioxidants! Besides, Japanese Green bell peppers are much smaller than their counterparts, roughly one third the size of the type marketed in America. Additionally, they are much less plump and are more narrowly shaped. In addition, the skin of a Japanese Green bell pepper is actually thinner, requiring a shorter cooking time, not to mention that its flavor is sweet with a slightly bitter after taste. In Japan, the small bell peppers are used mostly in deep-fried and grilled preparations. They are also most often dipped in tempura and fried.
