Indian Eggplants are believed to be native to India and have been around for thousands of years. They are small and oval, with a glossy, smooth purple outer skin. In addition, the inner flesh is firm, crisp, and obtains a mild flavor with sweet notes and a creamy texture when cooked. Nutrition-wise, Indian eggplants are an excellent source of fiber and contain some vitamin B6, vitamin K, and potassium. They also contain anthocyanins, which have antioxidant properties. Besides, due to their high-fiber content and low amounts of soluble carbohydrates, these eggplants are an ideal food for managing diabetes.
