New varieties of eggplant, such as the Jade Sweet, are bred for flavor and lack the bitterness commonly found in older varieties of eggplant. These eggplants have a uniform, oval shape and a shiny, smooth outer skin, not to mention that they have a tender and spongy texture with a sweet and mild flavor. Eggplants in general contain fiber, potassium, vitamin C and B6, which are all known to help lower the risk of mortality from heart disease. Studies have even shown that eating these fruits leads to lower rates of heart disease even if eaten in smaller quantities.
