Predominately grown in Mexico and Central America, Key limes resemble common ones but are generally smaller and more rounded with a green skin that is often blushed with yellow. As for their segmented, seed-bearing flesh, it is known for its tart juice, with bitter undertones. Key limes are actually a great source of vitamin C, folate and potassium. Besides, the essential oils found in their rind provide antibacterial, anti-fungal, anti-inflammatory, anti-parasitic, and antioxidant benefits. These limes are so beneficial, that research is currently being conducted on their anti-cancer benefits.
