Nobody is quite clear for how long the Amish kept growing these snap peas, but the seeds are now making the rounds amongst heirloom seed sellers. This snap pea is quite tolerant to sitting on the vine, that is, until you remember to pick the peas in 3 days, unlike snow peas which must be picked daily OR ELSE. What makes Amish snap peas special is the fact that they are delicate and sweet even when the seeds develop. Besides, they are delicious raw, eaten in the garden, but are also excellent lightly stir-fried or steamed. Nutrition-wise, all snap peas contain many vitamins that offer benefits for the entire body. They are a source of vitamin K, vitamin B6, vitamin C and Folate, which in turn is needed to make red and white blood cells in the bone marrow and convert carbohydrates into energy.
