Crapaudine beets are thought to be one of the oldest beetroot varieties, possibly dating back a thousand year! They have a unique elongated and tapered shape like a carrot, with a dark, almost black, bark-like skin. Besides, they have a strong earthy taste and a sweetness that lends itself well to both savory dishes as well as desserts. In addition, Crapaudine beets are a good source of folates and antioxidants, and like all varieties, they also contain betanin, which is a phytonutrient that gives this vegetable its deep pigment, and acts as an anti-inflammatory, anti-oxidant and detoxifier.
