Besides, they contain beta-carotene, fiber, vitamins A and C, and potassium. In addition, all pumpkins contain antioxidants that neutralize free radicals, stopping them from damaging your cells. Cooking-wise, Blue pumpkins are best suited for baking, roasting, boiling, and steaming. They can also be used in both sweet and savory preparations, although their sweet flavor lends itself best to desserts and baked goods such as pie fillings, scones, and cakes.
