Description

Also called Egyptian cucumber, the Sponge gourd has a smooth, green skin and an equally smooth, creamy-white flesh. In fact, this variety has a mild, zucchini-like sweet taste and a silky texture. Besides, only the young fruit of the Sponge gourd is used in culinary applications, although it may also be eaten raw, like cucumbers. Nutrition-wise, the Sponge gourd is loaded with nutrients such as dietary fiber, vitamin C, vitamin A, riboflavin, zinc, thiamine, iron and magnesium. In addition, all edible gourds, including the Sponge gourd, contain several anti-inflammatory compounds that aid in reducing inflammation throughout the body.
