“Grown in Britain from before 1820, ‘Hollow Crown’ is probably the oldest parsnip still in cultivation. Each root will grow to around 30 cm, with nice solid flesh and very sweet flavor. As a matter of fact, most parsnip cultivars are high in antioxidants including vitamin C and polyacetylenes that may prevent oxidative stress and chronic conditions like cancer, diabetes, and heart disease. Well, obviously this plant resembles carrots not only in appearance, but also in the ways it can be used. However, parsnips have a sweeter taste, especially when cooked. Besides, they can be enjoyed in various ways. For instance, they can be baked, boiled, pureed, roasted, fried, grilled, or steamed.
